CAESAR SALAD WITH BABY SHRIMP

Yield: 4 to 6 servings

INGREDIENTS

-  2 ounces cooked baby shrimp
-  1 medium head romaine lettuce, torn into bite-sized pieces
-  1 tablespoon grated Parmesan cheese
-  1 cup croutons, preferably homemade

Dressing Ingredients:

-  1 egg
-  1 teaspoon crushed garlic
-  1 anchovy, minced
-  4 teaspoons lemon juice
-  1 tablespoon red wine vinegar
-  1 teaspoon Dijon mustard
-  1 tablespoon grated Parmesan cheese
-  2 tablespoons olive oil

DIRECTIONS

In large bowl, place shrimp, lettuce, cheese and croutons.

Dressing: In small bowl, combine egg, garlic, anchovy, lemon
juice, vinegar, mustard and cheese; gradually whisk in oil
until combined. Pour over salad and toss to coat.

-  1 tablespoon vegetable oil
-  2 teaspoon crushed garlic
-  3/4 cup chopped sweet green pepper
-  3/4 cup chopped mushrooms
-  3/4 cup pot barley
-  1-1/2 cups crushed canned tomatoes
-  3 cups chicken stock
-  1-1/2 teaspoons dried basil (or 2 tablespoons chopped fresh)
-  1/2 teaspoon dried oregano
-  3 ounces feta cheese, crumbled

DIRECTIONS

In large nonstick saucepan, heat oil; saute garlic, green
pepper and mushrooms until softened, approximately 5 minutes.
Add barley and saute for 2 minutes, stirring constantly.

Add tomatoes, stock, basil and oregano; cover and simmer for
approximately 30 minutes or until barley is tender. Pour into
serving dish and sprinkle with cheese.

INGREDIENTS

-  4 medium baking potatoes
-  1 cup chopped broccoli florets
-  2/3 cup light sour cream
-  1/4 cup 2% milk
-  1/4 cup grated Parmesan cheese
-  2 tablespoons chopped fresh dill (or 2 teaspoons dried)
-  1/4 cup chopped green onions (about 2 medium)
-  3 ounces smoked salmon, chopped

DIRECTIONS

Bake the potatoes for 1 hour or until easily pierced with a
fork; let cool slightly. Meanwhile, in a saucepan of boiling
water or in microwave, cook the broccoli for 1 minute or
until tender-crisp. Drain and set aside.

Cut potatoes in half lengthwise, and carefully scoop out
flesh, leaving skins intact. Mash potato with sour cream
and milk; stir in 2 tablespoons of the Parmesan, the dill,
green onions, smoked salmon and broccoli. Spoon mixture
back into potato skin shells; sprinkle with remaining
2 tablespoons Parmesan. Bake for 10 to 15 minutes, or
until heated through.

-  3 small ripe bananas
-  1 cup orange juice
-  1 cup strawberries
-  6 tablespoons lemon juice
-  1/2 cup cold water
-  1 package gelatin
-  Orange segments or sliced strawberries

DIRECTIONS

In a blender, combine bananas, orange juice, strawberries
and lemon juice; puree until smooth. Put water in a small
saucepan; sprinkle with gelatin. Let stand 1 minute. Heat
gently, stirring until gelatin dissolves. With motor
running, pour hot gelatin through blender feed tube;
puree until smooth. Divide among 6 individual dessert
dishes or champagne coupes. Chill 2 hours. Serve garnished
with orange segments or sliced strawberries.

DIABETES AND FOOT ULCERS

Adults with diabetes need to take special care of their
feet. People with diabetes are at risk for foot injuries
due to numbness caused by nerve damage (diabetic
neuropathy) and low blood flow to the legs and feet.

The most serious injury is a foot ulcer. Diabetic foot ulcers
are at very high risk of becoming infected, and sometimes
they cannot be healed. Non-healing foot ulcers are a frequent
cause of amputation in people with diabetes. Patients with
foot ulcers may use wound dressings, skin substitutes, or
other treatments to protect and heal their skin.

Wound dressings are medical devices that are used to
protect ulcerated skin and assist in its healing. They
can range from simple bandages that you can buy in the
drug store to complex materials that contain antibacterial
and antiviral substances.

Skin substitutes are products that help in closing the
wounds of slow healing ulcers in patients with diabetes.
They are made from human cells known as fibroblasts that are
placed on a dissolvable mesh material. When the mesh material
is placed on the ulcer, it is gradually absorbed and the human
cells grow and replace the damaged tissue in the ulcer.

THE SECRET'S IN THE MARINADE

Marinades are especially popular during the grilling
season. They enhance tenderness as well as taste. And,
in mysterious ways scientists don't completely understand,
marinades work magic combating the harmful carcinogens
that form when meat, fish, or poultry is grilled.

Here are two marinades – one with the flavors of
India, the other, of Polynesia. They are especially
appropriate for summertime grilling and work equally
well with poultry, red meat and seafood.

RAJ-STYLE MARINADE

Ingredients

-  1-1/2 cups low-fat plain yogurt
-  2 Tbsp. fresh lemon juice
-  1/4 tsp. cayenne pepper
-  2 tsp. minced garlic
-  2 tsp. ground coriander
-  1 tsp. ground turmeric
-  2 tsp. minced fresh ginger
-  Salt and white pepper to taste

Directions

Place yogurt, lemon juice and seasonings in a blender
and mix at low speed until well combined.

Place chicken breasts (or other kinds of meat) in a non-metal
pan. Add yogurt mixture, mixing with a wooden or plastic spoon
until chicken is well coated. Cover the pan and marinate in
the refrigerator up to 60 minutes.

Take chicken out of marinade and remove excess marinade with
paper toweling. Grill chicken until cooked through (when
juices run clear), turning frequently to prevent charring.

Makes enough for 4 servings (for 3/4-1 lb.
skinless chicken breasts).

Nutritional Information Per Serving (Marinade Only):
62 calories, 1 g. total fat (less than 1 g. saturated fat),
8 g. carbohydrate, 5 g. protein, 0 g. dietary fiber, 65 mg. sodium
Diabetic Exchanges: 1/2 Low-Fat Milk

POLYNESIAN MARINADE

Ingredients

-  1-1/2 cups unsweetened papaya juice or 1 papaya,
  pureed, plus water to equal 1-1/2 cups in total
-  1 Tbsp. reduced-sodium soy sauce
-  1 Tbsp. fresh lime juice
-  1/2 tsp. minced fresh ginger
-  1/4-1/2 tsp. dried hot red pepper flakes, or to taste
-  1/2 tsp. salt

Directions

Combine all ingredients in a blender and mix on low speed
until smooth. Transfer to a non-metal pan. Add meat, poultry,
or fish and mix with a non-metal spoon until thoroughly coated.

Cover and let stand for 30 minutes at room temperature or
refrigerate for 1 hour. Take food out of marinade and remove
excess marinade with paper toweling. Grill until cooked,
turning frequently to prevent charring.

Makes enough marinade for 3/4 to 1 lb. meat, chicken or
fish, or 4 servings.

31 calories, less than 1 g. total fat (0 g. saturated fat),
8 g. carbohydrate, less than 1 g. protein, 1 g. dietary fiber, 518 mg. sodium

A method of taking a picture of the flow of blood in the
vessels of the eye by tracing the progress of an injected dye.

NEPHROPATHY
Disease of the kidneys caused by damage to the
small blood vessels or to the units in the kidneys
that clean the blood. People who have had diabetes
for a long time may have kidney damage.

PERIODONTAL DISEASE
Damage to the gums. People who have diabetes are more likely
to have gum disease than people who do not have diabetes.

TOLBUTAMIDE
A pill taken to lower the level of glucose
(sugar) in the blood. Only some people with
noninsulin-dependent diabetes take these pills.

RISK FACTOR
Anything that raises the chance that a person will get a
disease. With noninsulin-dependent diabetes, people have
a greater risk of getting the disease if they weigh a lot
more (20 percent or more) than they should.

QUESTION:

What does monitoring my blood glucose entail?

ANSWER:

The process of monitoring one's own blood glucose with a
glucose meter is often referred to as self-monitoring of
blood glucose or "SMBG." To test for glucose with a typical
glucose meter, place a small sample of blood on a disposable
"test strip" and place the strip in the meter.

The test strips are coated with chemicals (glucose oxidase,
dehydrogenase, or hexokinase) that combine with glucose in
blood. The meter measures how much glucose is present.

Meters do this in different ways. Some measure the amount of
electricity that can pass through the sample. Others measure
how much light reflects from it. The meter displays the glucose
level as a number. Several new models can record and store
a number of test results. Some models can connect to personal
computers to store test results or print them out.
